Instructions

  1. Cook Fruit Filling:
    Simmer fruit, sugar, cornstarch, lemon, and cinnamon until thick. Cool.
  2. Make Cake Batter:
    Cream butter and sugar, add eggs. Mix in dry ingredients and milk. Bake in two pans at 350°F for 30–35 mins.
  3. Make Frosting:
    Beat cream cheese, butter, and sugar. Add vanilla. Tint part with strawberry purée.
  4. Assemble Cake:
    Slice cakes into 4 layers. Layer with frosting and filling. Chill 20 mins.
  5. Decorate:
    Frost fully. Add fruit on top. Glaze with jam. Garnish with mint.
