Cake Layers:
- 3 cups flour
- 2 cups sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup butter (soft)
- 4 eggs
- 1 cup milk

Fruit Filling:
- 2 cups strawberries (sliced)
- 2 cups peaches (diced)
- 1/3 cup sugar, 2 tbsp cornstarch
- 1 tbsp lemon juice, 1/2 tsp cinnamon
Frosting:
- 16 oz cream cheese
- 1 cup butter
- 4 cups powdered sugar
- 2 tsp vanilla
- 1/4 cup strawberry purée
Topping:
- Fresh strawberries & peaches
- 2 tbsp apricot jam (for glaze)
- Mint (optional)
Instructions
- Cook Fruit Filling:
Simmer fruit, sugar, cornstarch, lemon, and cinnamon until thick. Cool. - Make Cake Batter:
Cream butter and sugar, add eggs. Mix in dry ingredients and milk. Bake in two pans at 350°F for 30–35 mins. - Make Frosting:
Beat cream cheese, butter, and sugar. Add vanilla. Tint part with strawberry purée. - Assemble Cake:
Slice cakes into 4 layers. Layer with frosting and filling. Chill 20 mins. - Decorate:
Frost fully. Add fruit on top. Glaze with jam. Garnish with mint.
