- 2 cups heavy whipping cream
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 1 cup fresh strawberries, halved
- 1 peach, sliced thinly
- Mint leaves (optional)
- 2 tablespoons peach preserves, warmed
Instructions
- Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
- Whisk together flour, baking powder, and salt. Sift if possible.
- Cream butter and sugar until fluffy (about 3-4 minutes).
- Add egg whites one at a time. Then mix in vanilla and almond extracts.
- Alternate adding dry ingredients and milk to the creamed mixture. Mix just until combined.
- Divide batter between pans. Bake for 25–30 minutes. Let cool completely on wire racks.
- Cook strawberries, peaches, sugar, cornstarch, and lemon juice over medium heat until thickened. Cool completely.
- Whip heavy cream with powdered sugar and vanilla. Beat cream cheese separately. Fold together.
- Layer cake with frosting and fruit filling. Cover with whipped cream frosting.
- Decorate with fresh strawberries, peaches, glaze, and mint leaves. Chill for at least 2 hours before serving.

For best flavor, use ripe, in-season fruit. Chill thoroughly before slicing for clean layers.
