  • ¼ teaspoon almond extract (optional)
  • 3 cups fresh strawberries, hulled and sliced
  • 3 ripe peaches, peeled and sliced
  • ⅓ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1 cup fresh strawberries, halved
  • 1 peach, sliced thinly
  • Mint leaves (optional)
  • 2 tablespoons peach preserves, warmed

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. Whisk together flour, baking powder, and salt. Sift if possible.
  3. Cream butter and sugar until fluffy (about 3-4 minutes).
  4. Add egg whites one at a time. Then mix in vanilla and almond extracts.
  5. Alternate adding dry ingredients and milk to the creamed mixture. Mix just until combined.
  6. Divide batter between pans. Bake for 25–30 minutes. Let cool completely on wire racks.
  7. Cook strawberries, peaches, sugar, cornstarch, and lemon juice over medium heat until thickened. Cool completely.
  8. Whip heavy cream with powdered sugar and vanilla. Beat cream cheese separately. Fold together.
  9. Layer cake with frosting and fruit filling. Cover with whipped cream frosting.
  10. Decorate with fresh strawberries, peaches, glaze, and mint leaves. Chill for at least 2 hours before serving.

Notes

For best flavor, use ripe, in-season fruit. Chill thoroughly before slicing for clean layers.
