Ingredients

  • 2 cups vegetable broth
  • 1 cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/4 cup kalamata olives, sliced
  • 1/2 cup feta cheese, crumbled (or tofu for vegan)
  • 2 tablespoons extra virgin olive oil
  • Juice of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup fresh mint or parsley, chopped (optional)

Instructions

  1. Cook quinoa in vegetable broth until fluffy.
  2. Dice cucumber, halve tomatoes, chop onion, and slice olives.
  3. Whisk olive oil, lemon juice, oregano, salt, and pepper for dressing.
  4. Fluff quinoa, mix with vegetables and olives, and toss with dressing.
  5. Top with feta and herbs before serving.

Notes
