Description

These oatmeal banana cookies are the perfect no-bake snack for busy days. With minimal ingredients, you can create a delicious, healthy, and easy-to-make treat that’s perfect for hot summer days or a quick dessert.

Ingredients

Scale
  • 2 ripe bananas (the spottier, the sweeter)
  • 2 cups rolled oats (old-fashioned, not instant)
  • 1/4 cup natural peanut butter or almond butter
  • 1/4 cup honey or maple syrup
  • 1/3 cup dark chocolate chips
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Optional add-ins: chopped nuts, dried fruits, coconut flakes, or chia seeds

Instructions

  1. Prepare Your Workspace
Line a baking sheet with parchment paper or a silicone mat to prevent sticking. Gather all your ingredients and measuring tools.
  2. Mash the Bananas
In a large mixing bowl, mash the ripe bananas with a fork until smooth, with minimal lumps.
  3. Combine Wet Ingredients
Add peanut butter, honey or maple syrup, and vanilla extract to the mashed bananas. Mix until well combined and smooth.
  4. Add Dry Ingredients
Stir in the rolled oats, cinnamon, and salt. Mix until all oats are coated with the wet mixture.
  5. Incorporate Mix-ins
Fold in chocolate chips and any optional add-ins like nuts or dried fruits.
  6. Shape the Cookies
Drop rounded portions onto the prepared baking sheet. Slightly flatten each cookie with the back of a spoon or your fingers.
  7. Chill to Set
Refrigerate the cookies for at least 30 minutes until firm. For faster setting, place them in the freezer for 15 minutes.

Notes

  • Chilling Step: Don’t skip this! The cookies need to set in the refrigerator to firm up and hold together.
  • Cookie Size: Keep the cookie portions to about 2 tablespoons to maintain a consistent texture and shape.
  • Storage: Store cookies in an airtight container. They stay fresh for up to 5 days in the fridge and up to 3 months in the freezer.
