- 3 ripe bananas, mashed
- 3 large eggs
- 1/4 cup coconut oil, melted
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 2 1/2 cups almond flour
- 1/4 cup coconut flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup chopped walnuts or pecans
Instructions
- Preheat oven to 350°F (175°C). Grease or line a loaf pan.
- In a large bowl, whisk together mashed bananas, eggs, coconut oil, honey (or syrup), and vanilla.
- In another bowl, combine almond flour, coconut flour, baking soda, cinnamon, and salt.
- Mix the dry ingredients into the wet ingredients until fully combined.
- Fold in chopped nuts.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
