Ingredients

  • 3 ripe bananas, mashed
  • 3 large eggs
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 2 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a loaf pan.
  2. In a large bowl, whisk together mashed bananas, eggs, coconut oil, honey (or syrup), and vanilla.
  3. In another bowl, combine almond flour, coconut flour, baking soda, cinnamon, and salt.
  4. Mix the dry ingredients into the wet ingredients until fully combined.
  5. Fold in chopped nuts.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Store leftovers in an airtight container for up to 5 days or freeze slices for longer storage.
