- 2 lbs boneless, skinless chicken thighs
- 1 large red onion, sliced into half-moons
- 4 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup kalamata olives, pitted
- 1 can (14 oz) artichoke hearts, drained and quartered
- 1 can (14 oz) diced tomatoes, undrained
- 1/2 cup low-sodium chicken broth
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- 2 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp red pepper flakes
- Salt and freshly ground black pepper to taste
- 1/4 cup fresh parsley, chopped
- 1/4 cup crumbled feta cheese (optional)
Instructions
- Season chicken with salt and pepper. Optional: Brown in a skillet for 2–3 minutes per side.
- Place red onions at the bottom of the slow cooker.
- Add chicken, garlic, bell peppers, olives, artichokes, tomatoes, and broth. Drizzle with olive oil and lemon juice. Sprinkle herbs and red pepper flakes.
- Cover and cook on low for 7–8 hours or on high for 4 hours until chicken is tender.
- Optional: If sauce is thin, remove solids and cook sauce uncovered for 15–20 minutes to reduce.
- Serve over couscous, rice, or cauliflower rice. Garnish with parsley and feta (optional).
