Easy & Delicious Low Histamine Bread Recipe for Beginners – Dairy-Free & Additive-Free

  • Author: Jake
  • Total Time: 1 hour 15 minutes
  • Yield: 1 loaf (about 12 slices) 1x

Description

This beginner-friendly low histamine bread recipe is perfect for those with histamine intolerance. Made without dairy or additives, it delivers soft, flavorful bread using simple, fresh ingredients. Ready in just over an hour, it’s a healthy alternative to store-bought loaves.

Ingredients

Scale
  • 3 cups (375g) organic all-purpose flour (freshly opened)
  • 1 tablespoon aluminum-free baking powder
  • 1 teaspoon sea salt
  • 1 tablespoon maple syrup or honey (optional)
  • 2 tablespoons extra virgin olive oil
  • 1¼ cups (300ml) filtered water (room temperature)
  • Optional: 1 tablespoon fresh rosemary or thyme (avoid dried herbs)
  • Gluten-free option: Fresh gluten-free flour blend + ½ tsp xanthan gum if not included

Instructions

  1. Preheat oven to 375°F (190°C) and lightly oil a 9×5 inch loaf pan (glass or ceramic preferred).
  2. In a large bowl, whisk together flour, baking powder, and salt. Fold in fresh herbs if using.
  3. In another bowl, combine water, olive oil, and maple syrup (if using). Stir until dissolved.
  4. Make a well in the dry ingredients, pour in wet mixture, and gently stir until just combined.
  5. Transfer dough to loaf pan, smooth top, and make a shallow cut down the center if desired.
  6. Let dough rest in pan for 10 minutes.
  7. Bake for 45–50 minutes until golden brown and a toothpick comes out clean (internal temp ~200°F / 93°C).
  8. Cool in pan for 10 minutes, then transfer to wire rack to cool completely before slicing.

Notes

Always use freshly opened flour and baking powder to minimize histamine content. Avoid overmixing the dough for a tender crumb. Store cooled bread in a paper bag for up to 2 days, or slice and freeze immediately for longer storage. Avoid plastic storage at room temperature to prevent mold and histamine buildup.
