- 2 (8 oz) packages cream cheese, softened
- 1 (14 oz) can sweetened condensed milk
- 2/3 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1/4 cup powdered sugar
- Yellow food coloring (optional)
Instructions
- Line an 8×8 or 9×9 inch square pan with parchment paper, leaving overhang.
- Mix graham cracker crumbs, melted butter, sugar, and salt until combined.
- Press the crust mixture firmly into the pan and chill for 30 minutes.
- Beat cream cheese until smooth and fluffy.
- Add sweetened condensed milk, lemon juice, zest, vanilla, and powdered sugar. Mix until smooth. Add food coloring if desired.
- Pour filling over crust and smooth the top. Tap pan gently to remove air bubbles.
- Refrigerate for at least 4 hours or overnight until fully set.
- Lift out using parchment handles, slice into bars, and serve.
