  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 2 (8 oz) packages cream cheese, softened
  • 1 (14 oz) can sweetened condensed milk
  • 2/3 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar
  • Yellow food coloring (optional)

Instructions

  1. Line an 8×8 or 9×9 inch square pan with parchment paper, leaving overhang.
  2. Mix graham cracker crumbs, melted butter, sugar, and salt until combined.
  3. Press the crust mixture firmly into the pan and chill for 30 minutes.
  4. Beat cream cheese until smooth and fluffy.
  5. Add sweetened condensed milk, lemon juice, zest, vanilla, and powdered sugar. Mix until smooth. Add food coloring if desired.
  6. Pour filling over crust and smooth the top. Tap pan gently to remove air bubbles.
  7. Refrigerate for at least 4 hours or overnight until fully set.
  8. Lift out using parchment handles, slice into bars, and serve.

Notes
