- 2 cups cooked quinoa, cooled
- 1 English cucumber, diced
- 1 pint cherry tomatoes, halved
- 1 red bell pepper, diced
- 1/2 red onion, finely diced
- 1 cup kalamata olives, halved
- 6 oz feta cheese, crumbled
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup fresh parsley, chopped
- 1/3 cup extra virgin olive oil
- 1/4 cup fresh lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon honey or maple syrup
- Salt and black pepper to taste
Instructions
- Rinse and cook quinoa. Fluff with a fork and let it cool completely.
- Chop all vegetables into uniform bite-sized pieces.
- Whisk together olive oil, lemon juice, garlic, oregano, honey, salt, and pepper for the dressing.
- Combine quinoa, vegetables, olives, and herbs. Toss with dressing until evenly coated.
- Fold in feta cheese gently. Chill for 30 minutes before serving.
