  • 2 cups cooked quinoa, cooled
  • 1 English cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1/2 red onion, finely diced
  • 1 cup kalamata olives, halved
  • 6 oz feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/3 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon honey or maple syrup
  • Salt and black pepper to taste

Instructions

  1. Rinse and cook quinoa. Fluff with a fork and let it cool completely.
  2. Chop all vegetables into uniform bite-sized pieces.
  3. Whisk together olive oil, lemon juice, garlic, oregano, honey, salt, and pepper for the dressing.
  4. Combine quinoa, vegetables, olives, and herbs. Toss with dressing until evenly coated.
  5. Fold in feta cheese gently. Chill for 30 minutes before serving.
